Sweet Garleek
Have you ever wondered what would happen if a garlic and a leek made a baby? We did. The result of this love match, Sweet Garleek marries the sweetness of leeks with the mellow, savory notes of garlic. Use the whole thing—tops and all—sautéed, grilled or simply raw.

Cooking
Slice Sweet Garleek stalks in half lengthwise and rinse under cold water. Slice stalks into ¼-inch pieces—greens included! Heat a large sauté pan over medium-high heat. Once hot, add a generous glug of olive oil and add sliced Sweet Garleek. Stir and sauté for 10 to 15 seconds. Add a heavy pinch of salt and a splash of water and cover with a lid. Keep cooking over medium-high heat for 30 to 45 seconds, and remove from heat.

Storage
Roll Sweet Garleek stalks in a dry paper towel and place in a plastic bag or storage container. Store in the vegetable drawer of the refrigerator. Wash thoroughly before use.

This is our new Pla Pad Ton Kratiam - Wok fried barramundi with Sweet Garleek, Chinese celery, and long hot peppers. The garleek, which is sweet and so delicious, comes from @chefdanbarber's Row 7 Seed Company (@row7seeds), which is currently celebrating Sweet Garleek Month in August. Row 7’s sweet garleek is the result of combining garlic and leeks, resulting in something delicious which we are so excited to be using on our menu. 💚💚

burnt lettuce

we really love something about the slightly burnt taste of lettuce you get when you cook it over a hot flame so that it caramelizes just the outer layers, but the inner layers are still fresh and crunchy. craving that tonight, we made a super simple weeknight meal, highlighting the excellent produce we’re seeing at the @unsqgreenmarket market right now! first, we made a vinaigrette to play around with some of our goodies from @nomaprojects- highlighting their ‘kyoto secret peaso’ (made w split peas and kaznuri), nordic shoyu and just a touch of mushroom garum. we blended those ingredients with @kosterina olive oil, red wine vinegar, @row7seeds sweet garleek and shallots. we then brushed the dressing on @row7seeds spinach lettuce and seared it quickly on an extremely hot pan to caramelize the surface. we then stuffed the inner leaves with a slaw made from badger flame beets, hakurei turnips, lacto-fermented @regalisfoods white asparagus we made earlier this summer, toasted sesame and raw garleek, mixed with the same vinaigrette. topped with slices of fried sweet garleek and more toasted sesame for some additional textures. plated on some really cool plates from @connormcginnstudios. all fresh produce was from @norwichmeadowsfarm and tasting 🤤😋!

So, this month #aoc is partnering with them to help introduce the world to Sweet Garleek, the first-ever cross between garlic and leek. This new-to-the-world all, allium marries the sweetness of leeks with the punchy notes of garlic.
You’ll find it at both #aoc locations on our focaccia with black mission figs, fourme d’ambert & walnut.
It’s an example of what’s possible when chefs get involved in writing recipes beginning with the seed.

We were honored to be invited by Chef and sustainability innovator Dan Barber, to join an extraordinary group of restaurants in piloting the use of his brand new vegetable; Sweet Garleek.
Along with his restaurant Blue Hill at Stone Barn, Barber has founded Row 7 Seeds, a company whose mission is to collaborate across Chefs, farmers, and plant breeders, to reimagine food from the seed to the table and produce ingredients equally high in flavor and nutrients.
Their Sweet Garleek is a singular cross between garlic and leek. The new allium marries the sweetness of leeks with the savory spice of garlic. Recently, we featured Sweet Garleek grilled over the embers, in a dish of Rabbit from Pescadero.
