INGREDIENTS
1 tin Row 7 Sweet Prince Tomatoes
2 thick slices sourdough bread
1 garlic clove, peeled
4 anchovy fillets
1 cup aged Manchego cheese, microplaned
Olive oil
Flaky salt and black pepper
DIRECTIONS
Coat the bottom of a pan with olive oil and heat over medium-high. Fry the sourdough slices until golden brown and crisp on both sides.
While the bread is hot, rub one side aggressively with the raw garlic clove and use some of the liquid from the tin to season the bread.
Place two anchovy fillets flat on each slice of toast. Grate the Manchego cheese over the anchovy toast first. Spoon the Sweet Prince Tomatoes on top of the cheese pile. More juice will soak down into the cheese and bread.
