INGREDIENTS
1 tin Row 7 Sweet Prince Tomatoes
2 thick slices sourdough bread
1 garlic clove, peeled
4 anchovy fillets
1 cup aged Manchego cheese, finely grated
Olive oil
Flaky salt and black pepper
DIRECTIONS
Coat the bottom of a pan with olive oil and heat over medium-high. Fry the sourdough slices until golden brown and crisp on both sides.
While the bread is still hot, rub one side aggressively with the raw garlic clove, then use a little of the liquid from the tin to season.
Lay two anchovy fillets flat on each slice of toast. Grate Manchego generously over the anchovies. Spoon the Sweet Prince tomatoes on top—their juices will soak down through the cheese and into the bread.
