Spinach Lettuce is the result of a multi-year collaboration with lettuce breeder Bill Waycott. Based in California’s Salinas Valley, the epicenter of the commercial lettuce industry, Bill grew disillusioned by the trend toward uniformity (for boxing) and shelf life (for shipping) at the cost of nutrition and flavor.
Bill set out to begin his own independent breeding and seed company, choosing to instead focus on breeding more nutritious—and more delicious—lettuce varieties. The goal? To increase one’s daily nutrient intake with a simple salad.
Over multiple seasons, we collaborated with Bill in the field and the kitchen to identify varieties with unique leaf types, head shapes, textures, flavors, and nutrition.
The result is Spinach Lettuce, which stood out for its broad, deeply green, tender leaves and deep root system, used to mine for nutrients in the soil.
