Sweet Garleek Confit

This Sweet Garleek confit is as versatile as it is delicious. Serve it atop charred sourdough toast with herby labneh or whipped ricotta, alongside grilled summer veggies with flaky salt, or swirled into pasta with chili oil and lemon breadcrumbs. 

Ingredients:

  • 8 Sweet Garleek bulbs (whites only, save the greens for grilling or sautéing)
  • 1 cup extra virgin olive oil
  • 6 fresh thyme sprigs
  • ⅓ teaspoon salt

Preheat oven to 250˚F.

Season the Sweet Garleek bulbs with salt and place in a baking dish with the thyme and cover with olive oil. Bake for 1 hour until golden and soft.
