INGREDIENTS
1 tin Row 7 Sweet Garleek (drain the oil, reserve for another use)
6 large eggs
2 tablespoons heavy cream
2 ounces fresh goat cheese, crumbled
1 tablespoon Fresh dill, chopped
1 tablespoon butter
DIRECTIONS
Preheat broiler to high. In a bowl, whisk the eggs and heavy cream until aerated and uniform. Season lightly with salt and pepper.
Melt the butter in a 6-inch or 8-inch non-stick oven-safe pan over medium-low heat. Pour in the egg mixture and let it cook undisturbed for 1–2 minutes until the bottom and edges begin to set but the top is still wet.
Gently drop the whole Sweet Garleek pieces and goat cheese crumbles onto the surface. Do not stir, you want them to sit on top. Transfer the pan to the broiler for 2–3 minutes until the eggs are puffed and golden brown.Garnish with fresh dill.
