Grilled Sweet Garleek & Stone Fruit Salad with Honey-Harissa Vinaigrette

Serves: 2

INGREDIENTS

  • ⅓ cup extra virgin olive oil
  • ¼ cup apple cider vinegar
  • 1 tablespoon lemon juice
  • 2 tablespoon harissa paste
  • 1 ½ tablespoon honey 
  • 1 tablespoon tahini
  • 2 cloves garlic, peeled
  • ½ teaspoon salt 
  • ¼ teaspoon black pepper

DIRECTIONS
Whisk together all vinaigrette ingredients until emulsified.

Brush Sweet Garleek and stone fruits with olive oil. Grill Sweet Garleek and fruits over medium heat, 2-3 minutes per side until charred.

Let cool 5 minutes, then cut fruit into wedges and slice Sweet Garleek into smaller spears.

Lightly toss the Sweet Garleek with vinaigrette.

Arrange on a platter and top with feta and almonds. Drizzle some more vinaigrette over the top and finish with flaky salt.
