Cast Iron "Smashed" Upstate Abundance Potato Pizza

Serves: 4

INGREDIENTS

1 bag Upstate Abundance potatoes
45g olive oil
8g kosher salt
3g freshly cracked black pepper
5g garlic powder

180g marinara sauce
200g mozzarella cheese, shredded
100g sharp cheddar cheese, shredded
150g pepperoni slices
60g red onion, thinly sliced
45g fresh basil leaves
15g extra virgin olive oil (for finishing)

DIRECTIONS

Boil Upstate Abundance potatoes in salted water until "just fork tender" - about 15-20 minutes. Drain and let cool slightly until safe to handle. Oil the cast iron skillet well. Place boiled potatoes in a skillet. Use the back of a measuring cup or spatula to smash each potato until about 1/4-inch thick.

Drizzle with olive oil, season with salt and pepper. Bake at 425°F for 20-25 minutes until the edges are golden and crispy. Remove from the oven, add sauce, cheese, and toppings.

Bake for another 10-15 minutes until the cheese melts.
