Poulette is a potato more than a decade in the making, inspired by legendary chef Michel Bras.
In 2013, legendary French chef Michel Bras and second-generation potato breeder Dr. Walter De Jong sat next to each other at a conference about seed hosted by Dan Barber. They talked about potatoes and Bras' favorite—the Institut de Beauvais, a French variety Bras loved for its extraordinary flavor and texture (and because his mother grew it).
Walter went looking for it and crossed it with a classic New York potato.
What followed was ten years of chasing flavor and testing alongside chefs and farmers across the country. Poulette is the result.
It’s savory (hence the name, a young chicken in French), rich and deeply roasty.

Trial Network
The Poulette potato was trialed for many years in the fields and kitchens of our Trial Network, a participatory community of over 150 chefs and farmers. The network provided early feedback on the Poulette, enabling Row 7 to better predict where the variety will thrive and identify opportunities for future improvement.

Seed Producers
Seed is a crop, too, and how they are grown matters. Our Poulette seed potatoes were produced organically in New York. These methods create strong, resilient plants capable of fending for themselves. Stronger plants literally are tastier plants.

Growers
To bring Poulette to market, we partnered with a network of organic farmers who share our passion for exceptional flavor—starting with the soil. These growers have nurtured this new variety from seed to harvest. This isn’t just a potato—it’s a collaboration rooted in purpose.
